I finally got a chance to use my new Cabela's 10 tray dehydrator. I started with 5lbs of chunked stew meat from Costco. After some trimming I then tossed the meat in some marinade. I used some Veri Veri Teriyaki marinade mixed with 1 tsp of cure#1. Then I used the Foodsaver Vacuum Marinating Canister on the marinate cycle for a 10 minute run. The into the fridge for a overnight rest. In the morning I fired up the Bradley and set the PID to 160F. The jerky chunks got 5 hickory pucks and 2 hours of Bradley time. Then I moved the chunks to the Cabela's dehydrator for a 10 hour run at 160F. At hour 8 I removed the chunks and dredged them in more Veri Veri Teriyaki then back in the Cabela's for a few more hours. One tray got the treatment of crushed red pepper for heat ;D

I have many friends and family that want some....and if I made big packages it would not last very long! I would end up eating all of it. I must have ate half a pound after they were done drying ::)

Thanks Pete...That dehydrator worked great! I only had to use three trays for 5lbs of nuggets and it has 10 trays :o I got it for $79 and that is a bargain ;D
BOY... that jerky went quick :o So I had to make more and this time it was a 7lb batch. I basically did the same thing but did not smoke the jerky in the Bradley this time...all dehydrator baby! And I cut them into smaller nuggets this time so a 7 hour time in the dehydrator is all they needed ;)
