i tried making some polish kabanosy sticks with all wild game. i made them with venison and wild boar with some high temp cheddar cheese thrown in. they came out a little drier than domestic pork with beef but they taste real good

Thats a pile of good lookin sticks you got there.
If you find the wild game is a little dry try puttin in some fat, pork of beef will work.
When using only wild game I like 80% deer to 20% beef fat, I use the fat I trim of a brisket.
I'm just sayin.
