it turned out great.  four hours of smoke and six hours in the proofer. I cant wait to do another one.

thanks, it was the first smoke with the new PID in the proofer.   that PID works great.

What was your cooking temp in the proofer neo? That sure turned out perfect looking. Care to share what seasonung you used on it?  ;D

That hunk of beef looks PERFECT!!!

Its been awhile sense I've smoked a Prime Rib Roast, gonna havta dig one outta the freezer.  ;D

I set the PID for 200 till the I.T. reached 110 degrees then I lowered the temp to 185 till the I.T. reached 125. Pulled and FTC for one hour.  Put in a 500 degree oven for 8 minutes to crisp up.  Ready to serve. 

To season it I basted with olive oil, then put some Johnny's seasoning, Granulated Garlic, and put a good layer of McCormick's steak rub.  Wrapped in saranwrap over night. 

I am definitely going to do another one very soon...

A bread proofer is used to raise bread.  It has racks for bread to go on and a heating element to maintain a certain temp.  I converted mine into a smoker, wired it for 220 and installed a smoke generator.
