Title: Short ribs

Went to Publix to get some beef ribs. Didn't see any so I asked the butcher. He said they didn't have any except he could cut me some short ribs. When he was cutting them he asked if I wanted to keep them long rather than have them sliced into 3" lengths that they normally are. Thought that was a good idea. They are some good looking ribs.

So I seasoned 1 with "Punch ya Daddy", 1 with Alabama red, one with GP, and one with "Everglade heat'

Put into the smoker with 3 hours of mesquite. Later I'll add some corn on the cob and some asparagus with EVOO and some seasoning.

The ribs were great. I think I will always ask for them cut this way.

Those ribs look fantastic :o Now wrap some of those asparagus spears with bacon and sprinkle with parmesan cheese next time ;)

DOn't know since I only ate 2 of them. During the foiling, and unfoiling I lost track of which one was which. I guess the adult beverages were too good. ::)

Those ribs and fresh asparagus look great.  I will have to try that cut of beef rib soon.  Thanks for the idea.

Those look like they turned out nice. Costco here sells boneless shorts and when I opened them up, they were just big slabs of goodness. I cut them into the traditional shortrib width. I smoked them and then used them in a recipe my mom gave me that finishes in a dutch oven. I kinda missed the bones, but the flavor was still there.

Dang Gus it's good to see you and the smoker/PID back up and running.

I'm jealous, not had to time to do much lately. Just taken care of Mom and work.

Been busy at work also. Tomorrow I'll call farm that is my new connect for bellies. Order them tomorrow and pick up on Friday/Saturday. Haven't been able to get good bellies here so I hope this works out. I'mlike a little kid waiting for Christmas to come. May order some baby backs also.
