Title: Another Gunpowder Tri-Tip
Post by: muebe on April 03, 2011, 04:03:31 PM
I smoked a 3lb Tri-Tip I had in the freezer. It was rubbed with gunpowder before being vac sealed. I smoked it in my natural gas smoker. I set the thermostat to 210F and loaded the chip box with half cherrywood and the other half applewood. I took it to a IT of 140F and FTC for an hour. Man I love that gunpowder ;)

gunpowder?

IMR-4330? Ha ha...

What is it ???

As for tri tip, had it ten years ago. A buddy I worked with was from California, gave me some one night, loved it. Never could find it here in NC though. Maybe more popular now. I bought five last week at Costco. Three in the freezer and two in the fridge. Wondering how to smoke/grill them. Any basic pointers on tri-tip?

Thanks man. What does it taste like? Never heard of it before, but see several threads here and it got me curious. Doing lots of smoking this summer as we are home. We have been working out of state in Alaska and on Nantucket in recent years. Have not used my OBS but 4-5 times as we only got home for a few weeks a couple times a year. Making up for lost time you might say. What are some ways to use this infamous gunpowder? Does it take the place of other dry rubs? Just adds smoke/grill flavor? Any ideas appreciated. Doing some pulled pork soon. Brought back some red salmon from Alaska a few weeks back. Bought $100 worth of tri tips last week. All loaded up and don't know what to do. Ha ha...
