Title: Move over Curt! Lunchtime!

First day of my first full week of retirement.  Hmmm?  What will I serve for lunch?

Why, how about jamabalaya with SRF chorizo?  I unabashedly will tell you I will take a tried and true recipe and "cheat" the heck out of it.  The jambalaya is the best jambalaya mix I have found in NOLA from Oak Grove Smokehouse.  The chorizo is from SRF, already fully smoked and cooked.  The onion, bell peppers and celery is from a frozen mix I can buy at the local grocer.  From start of prep to the bowl was exactly 30 minutes.

Man, this was good.  What did you you have Curt?

Nah, just couldn't resist today.  Besides, Curt has this lunch thing cornered.

Hal, Jan and I were WAY happy with the SRF chorizo.  It has GOT some smoke on it along with some nice heat.  Will definitely be ordering that again!

I had leftover jambalaya yesterday for lunch. 

I have tried the SRF italian sausage and it was really good.  It has a little smoke on it too.

Ok now that looks great!  What is SRF chorizo?

Did you know you can dice up your own peppers/onions/celery lay out on sheet tray separated,(so doesn't clump together) freeze.  When frozen, scrape in freezer bag. Put back in freezer.  Use when needed.  I know it's a bit more work, but sometimes I find I have to many and it's better then letting them go bad...just saying.
