Title: Store bought sausage - smoke and eat?
Post by: BigFella on April 06, 2011, 10:38:21 AM
Ok, so I have a question... Last night I bought three links of sausage from Guinta's at the Reading Terminal Market here in Philly. I would like to get some smoke on them prior to eating.

If I cook at 225, can I get these sausage completely done in the Bradley? What if I cooked at 225 for about an hour and then finished them in my oven?

What does everyone think would be the best option?

Thanks all!!

I've done store bought in the Bradley start to finish. No issues.

I've smoke/cooked fresh sausage many times also, just crank the heat up and dont put the sausage in till the smoker is over 225. I do mine at 250+ and pull them out when the IT hits 160.
