Title: Bone In or Out Butt?
Post by: Brian.R on April 07, 2011, 08:39:45 AM
I have smoked a boneless butt that turned out great . Am wondering about trying a bone in. Will the smoke time be longer?  Not that it matters, right now waiting for the snow to go away and breakup to be finished so i can get back to work pipe lining ;D. Apparently the wife figured I didn't have enough excitement in my life and picked the day before i came home to decide to quit smoking. I am spending a LOT of time outside and figured i might as well be using the smoker.  BUT! she did question me on why I wanted to move the BEER fridge from the garage to the shed (smoker's in the shed), she put a WHOA to that, She has been known to actually put food in it ??? :(. So i figured I'd one up her, Canadian Tire just happen to have a sale on little SS bar fridges ;D Fits quite nice next to the Bradley, and i still got busted! :(  Apparently my bride DOES take the garbage out and seen the box waiting to get picked up!  Some days a fellow just can't win! ???

Try one of the bone in butts and see which one you like better. I always do the bone in ones. Your have to do a better job of hiding the evidence. Destroy the box next time!!

I've done both and cant tell the diff.

Oh ya, just tell the bride you got the fridge so she can have more room in the one in the garage.  ::)

I thought my bride never went past the back gate. For 30+ years I've been telling her "It's legal in Alberta for women to put gas in the car, and take the trash to the back ally"  Who'd a thunk she'd a listened to me THAT day????    Just when you think you got em figured out................they blind side ya! ??? ::)

I'd go with OU812's suggestion for the fridge.

I've done both butts and can't really tell any difference either.  It's not all that easy to find butts here so I take 'em any way I can get 'em.

The advantage of bone-in is that you can slide it out when the butt is done, take a pic and say "Looky there.  That bone slid right out!"

If it fits nice next to the Bradley, you could have told her it was your cold smoker. ;)

We have been married for 30 years this Nov. Since day one we decided that I will make all the important decisions, and she will make all the minor decisions. This has worked well. Of course so far in the 30 years we haven't had an important decision come up. ???

I prefer the bone-in for pulled pork, and boneless when I am going to use the butt for sausage. I can really taste the flavor the bone imparts into the meat. But boneless will tend to finish sooner.
