Title: First Sausages

Yesterday they were in the casing and today they're out the smoker.  While neither of the two had the exact flavor I wanted, they both matured and came much much closer to what I was striving for after smoking.  I did have one very positive outcome, both had the exact texture I wanted.

Nices lookin sausages DPCA !!!! It is a very fun Hobby and Your helper will even make it more enjoyable over the years :)
