Title: Oak smoked brisket
Post by: Chili Head on April 09, 2011, 09:45:32 AM
Fired up the bradley this morning and put in a brisket. I used some John henrys Texas brisket rub on this one. It's smelling really good. We're stalled out at 167 right now..only a few more hours to go!

I gotta say this one turned out the best so far! Everyone said this brisket is the best they have ever tasted! Whoooo! My dad even said he thinks it was a competition winner!
I think he's biased but it was cool to hear it. I used oak for three hours and it got to a temp of 205 in 7 1/2 hours then I ftc'd for another hour.I had the Bradley set at 260 which held 250 - 255 really well.
