7 racks of top round getting two hours of hickory smoke for jerky. At the end of the smoke period will transfer the racks to the Excalibur to finish dehydrating. Got about that much more meat to do tomorrow.

Still know how to use it and "mod" it. Got the rail system today from Scott to convert that 4 rack to an 8 rack. Also received the sausage hooks for it and have an Auber dual probe PID on the way too!
There are just somethings a Bradley is better at than a MAK. Now that I'm retired and have the time to devote to those things I can get back to the Bradley.

Jerky's done. Blatantly taking another page out of NePaS's playbook and have it tucked away in a paper bag.
Thinking I may doing another 5 pounds tomorrow. :o :)

Looks good and never used top round for jerky before. Will have to give that a try. I've seen the paper bag in a couple pics in the past. What is that supposed to do for you?
The paper bag absorbs the excess moisture that the jerky will give off, both what little fat there may be and just the general "sweat" that warm meat coming into a cool environment will yield.

Money shot of yesterday's jerky. Started with a little over 4 pounds raw weight. The finished product weighs 2 pounds 2 ounces.
