Title: Got a bit in the fridge for next week

Hi all,

Trying to go the bacon route again.

Got a belly in and cut it half.  One half will be regular bacon with pink salt and the other a with the same but adding maple syrup. 

Also have a loin done up with Morton's Tender Quick for some Canadian.

I'm feeling cursed.

This morning my wife found the two bags wil bacon had holes in them and had leaked bad.  She said she cleaned up quite a bit. 

Is it still safe to continue or am I SOL due to not knowing how much cure was lost?

I had some CB leak a bit..  I just let it keep going and checked to see if that one firmed up like the others.  Turned out fine.

same happened to me. I added more maple syrup and that got the juices flowing again.  haven't cooked yet but will be soon.

Giving it a try.

I added more syrup on one and brown sugar on the other.

Picked up a fresh box of hickory pucks for them so I'm really hoping it turns out.

Edit - Here what I have so far.  Using the recipes from the tested and proven site here.

I'm sure it will work out fine Jim, Good thing the wife caught it in time :D
