Not sure you need the chips except maybe for the trip down - NOLA has Zapp's (http://www.zapps.com/) and there ain't none better.

I found about a pound of smoked 'Mammoth Cheddar' cheese in the bottom of the fridge... And some smoked cheese curds. And a small block of pepperoni Colby jack - also smoked. All Wisconsin cheeses..
Should I bring as well? (anybody packing a knife and cutting board??)

Gotta tell you guys - I go to New Orleans to eat Cajun & Creole food and, while I will undoubtedly elbow my way in for some of the goodies y'all are bringing, my focus will be on places like Cochon, Jacques-Imo's, K-Paul's, Bon Ton, Bayona, Drago's, Felix's, Coop's, etc. Jes' sayin'.

You folks might be in for a surprise with Zapp's chips. I know that at least in the Lafayette area during Mardi Gras there were none to be found. Ever since they (Zapp's) got bought out by Utz there's apparently been a shortage despite promises to the contrary.
Rick don't forget the Gunpowder for Ka Honu, cause it looks like you got everything else!!! ;D
