Title: Karo syrup?
Post by: watchdog56 on April 20, 2011, 02:35:38 PM
I am going to be making venison summer sausage this weekend and I got a "secret recipe" from someone here on this board ???(not really secret he shared it with everyone) and it calls for corn syrup solids. I  have Karo light corn syrup with real vanilla in it  and was wondering if I can use this instead? If so how much?
Also calls for 2 cups dry milk. Can I use soy protein concentrate instead/ If so how much?

Thanks in advance.

Yep, but I think you have to watch which one you use:

I use the soy protein concentrate at a 1-1 rate substitute for the powdered milk. Just be sure not to pack the soy protein concentrate when measuring.

Or the powdered milk.  ;D

As far as the corn syrup solids they are only 40% as sweet as sugar, you can use sugar, just do the math.

I might also add that the corn syrup solids acts like a binder, and helps retain moisture, just like the powdered milk.

1.40oz clear karo to 5lbs of meat. Stay Away from the flavored karo
