Title: ?? on yesterdays rib smoke

so I smoked some ribs yesterday and some of them  had the pink smoke ring but were brown in the middle.  I did 2 racks I used the 3-2-1 method on one, and the other I didn't use any foil just smoked for the 6 hrs.  Both racks had some with brown in the middle.  I thought the texture was about right they pulled off the bone with ease.  Were they under cooked? over cooked.
If it makes a difference I smoked these on my offset smoker instead of the Bradley this time.  I took some pics but I don't know how to post them.  thanks for any help

Sounds just right to me.

The brown in the middle sounds normal, the color around the outside can come from the rub.

The smoke ring comes from combustion when burning wood/charcoal and not always peasant after smoking.

I should add, these ribs were a dark brown not the normal light brown.  At the time I didn't think much of it since the texture seemed right but when I got up this morning I got sick and I've had an upset stomach most of the day.  I don't know what caused it but I'm curious if the ribs made me sick.

Sounds like you might have eaten some spoiled meat.

What temp were you running the offset at? six hours should be plenty foil or not, for safe eating IT. undercooked meat does not usually fall off the bone.

Your ribs look real good, nice pictures and yes devo did post the link on how to post pictures it is in the 4th post down in this thread...again nice ribs..
