Title: Plan B - a Polish Easter

Original plan was the wife and I were going to Easter brunch at one of the local restaurants. Now decided to stay home. Probably too late to do a ham from scratch, and I don't feel like turkey. So we are going to have Polish food - pierogi, kielbasa and throw in a lamb shank.
Decided to make the pierogi tonight.
Started out making two fillings - potato and sauerkraut. First I sauteed some sauerkraut,garlic powder, Southern Cajun spice.

Next made the potato stuffing. Made mashed potatoes, and added some sour cream, cheese, melted butter, sauteed chopped onions, some minced jalapeno and some Southern Cajun spice. (relatives must have been from southern Poland?)
Then made some dough with flour, water, sour cream, and butter.
All ready to go:

Next roll out the dough and cut out circles about 4" in diameter.

Then stuff them with either the potato or sauerkraut stuffing. Put a spoonful of stuffing in the middle of the circle, fold it over and crimp the edges.

After that, throw them in boiling water and when they rise and float, take them out.

Now time to quality control check. You can eat them boiled, but I like to then take them and fry in butter and some onions.

A dish full of ones that fell apart. Couldn't let them go to waste so fried them up also.

Have the homemade kielbasa in the fridge, so just need to make the shanks. Anyone have a good lamb shank recipe?

So...  I'm still kitchen-less, I still have a ceramic smiling Christmas snowman on my desk, and you're making KILLER-LOOKING pierogi from scratch?
Ok... I see how fair that is.
