Title: smoked pork chops
Post by: Mikey on September 27, 2005, 08:45:21 AM
Hello, I am going to try and make some bacon in the ole smoker, and am going to try and brine some pork chops along with it. I had some really tsty smoked chops that were like big pieces of juicy ham and I want to know if there is anything I should know about trying this. I bought a maple cure from the states that people on this site say is good. Any suggestions? Thanks very much in advance.

I wasn't impressed with the last Pork Chops I did, so next time, I am going to cold smoke for just a couple of hours, then grill them.  To me, it would be the best of both worlds.
