Ok so I am new to jerky making and have a few questions about using GB.
How lean of meat do I need to use? I have made one batch and used 4/96. Is this the best to use or can I use 10/90 (cheaper).
Do I have to use a cure?
If I want to make teryeki with GB how to I do it with out the GB being to moist does it matter?
which teryeki is best to use?
If I don't use a cure how long will it last?
I am using a dehydrator for now I want to get it down before I move to the smoker.

90/10 has worked fine for me
90 / 10 works fine, I do not have an answer on the other questions as I have always used a pre made mix.
How much are you going to make?
1 pound, 2, 5?
Teriyaki is sweet and has ginger in it which is a natural tenderizor.
Lets say you make 2 pounds. Use 2/3 cup teriyaki. Taste and adjust if need be. You will also need some salt.
If your going to dehydrate and not smoke you do not need cure. BUT this is opt and your call.
GB jerky will keep for about a week in a paper bag in the fridge. Plastic zippy bags can cause moisture and make the jerky go bad faster
