Title: First crack @ cheese
Post by: Fernslinger on May 01, 2011, 07:41:10 PM
.5lb Gouda
2lbs of Mozzarella
2lbs of Pepper Jack
2lbs of Mild Cheddar
2 hours of apple smoke...got a little warm at the end and the cheddar started to sag a bit but the rest held up well.

Just gotta wait now :/

The wait is the hardest part!! But if you can do it there is some good eating in your future.

Mozzarella is the one that starts to sag on me if the smoker gets to hot.

I throw my smoked cheese in the back of my fridge, behind my stock pile of flour.  ;D

That way I dont think about it every time I open the door for a beer.  ::)
