Title: Pig Tails?

I just picked up a half dozen pig tails cheap, has anyone tried smokin' any? I think I'll try the same method as 3-2-1 used for ribs. Or am I way off base and need to do something different? Thanks in advance.

P.S. I will be taking pictures, but gotta figure out how to post 'em!   ;D

I am originally from Kitchener, I grew up on 'tails 'n' ribs done in a roasting pan with sauerkraut and potatoes. Sure made the house smell good! I remember Schnieders tails in the blue bucket, so good! I can't find 'em anywhere. Open to any suggestions, hopefully they involve the smoker...

Well, 24 views, no comments, I'm either: A. the only one who likes 'em, B. totally off my rocker, or C. trying a new thing. So, the 'tails are in cold salted water in the fridge 'till morning, I'll season them in the morning with Big Syd's "A Hint of Maple" rub, then commence to smoking. Stay tuned folks!

First time reading this thread. Never heard of eating pigtails. I can't wait until I read about how they are prepared, and how you ended up smoking/cooking them.

Gotta say I've never heard of eating them either.  Am curious.  I've eaten pig snouts and ears in various Asian dishes but never seen a cooked tail.

PIG TAILS !! YUMMEE !!

Love them. Pickled,or smoked they're great with a pint or two.

Never made them,but our local pub serves them occasionally .

While living in amish country all my life and growing up on a farm we had a saying that everything but the squeal was used...at most we would butcher 6 hogs at a time and my mother or grandmother had something cooking all day...and fed everyone helping to butcher..and that is the day the pigtails were prepared and eatin..

I too have no experience here, but I am thinking that there is less meat relative to bone on tails than on ribs, so maybe 3-2-1 is too long.  Now, I love smoke, so maybe 3-1-1 works, and I think that is the right general idea.

But, to be honest, I think they are more suited to stewing type of cooking than smoking.  Maybe smoke them for 3 hours then cook them in broth with onions, potatoes, and some herbs for a light smoked pig tail soup?  Just an idea, I have never seen them in the store here in New Hampshire, though we can get trotters almost any time we want them.

Part 2. Today we are doing some back ribs:

After they are done 3-2, 1 will be combinind them with the tails on the grill to finish with homemade sauce made from a Mennonite recipe. Will serve with sauerkraut and some kind of taters.

MT things are looking pretty good so far. Are you going to remove the skin on the tails before grilling and saucing?

MT I have to admit that the last time I have seen pig tails was back when I was in Cocoa FL and they were sold pickled along with pigs' feet at a place called the Zippy Mart (similar to 711). I was very squeamish then about trying them but what is unfolding in your smoker looks mighty good.

Well, it was a little while ago... they actually got a bit over done..  :'( no, I didnt remove the skin and fat till I ate em. it probably saved the goodness inside somewhat, because the stuff that didn't get over done was AWESOME!  It's the best tasting pork once ya get past the bones. I love 'em with sauerkraut 'n mashed taters, drooling now.  Will try it again, (had my beer goggles on when I finished them, hence no pics, oops s@#t happens)
