Finally took this thing out of the chest freezer. Plan on smoking it in the OBS. A 14lb bonless Costco Pork Shoulder. It is frozen solid :o It is going to take longer for it to defrost then to smoke :D

I put butts in the Pellet Poopers frozen solid, but I don't think I would try that in my OBS..

I got a frozen butt in right now in my GMG with 2 round roasts ;D
Must be gonna have party or make up a bunch of pulled pork for campin...which is a really great idea...

So I got the shoulder completely thawed and unpacked it for the rubdown. Well to my surprise one shoulder magically became two 7 pounders. It was a dang two pack :D One was rubbed with gunpowder and the other with Billy Bob's Que Butt Rub. Then plastic wrapped for a rest in the fridge...

I put the shoulders in last night at 11:00PM for the overnight smoke in the OBS. PID was set for 220F for 4 hours while smoke rolled with convection fan off. Gave them 3 hours of hickory pucks and 1 hour of mesquite pucks. Then after 4 hours program changed to convection fan and still at 220F with IT set for 200F. Got up at 6AM and they had a IT of 160 and still holding a cabinet temp of 220F. I changed the water and scraped the v-tray then bumped the temp to 225F for the rest of the smoke. At 11:30AM they hit a IT of 190F. I removed them and then FTC for 1 1/2 hours then pulled with the Bear Claws. Great bark on both and they were very moist. Southern Smoke's Butt rub is excellent. And the gunpowder is always good. So this was the big test for my 900W finned element and convection fan mods on my OBS and it passed with flying colors. I now have 35 hours of use on the new element ;D
The pulled pork was topped with Bull's Eye Carolina Style Mustard Barbeque sauce and some slaw. And a Blue Moon Honey Wheat to wash it down.

Now that is some great lookin pulled pork, really glad to see that the mods that you made are working out just great. I am sure there are more then just a few folks watchin your modifications...and you drink my oldest son's favorite brew...well done..

So does it sound like I have decreased the smoke time for two 7lb butts with the convection fan and 900W element? They took 12 1/2 hours to get to a IT of 190F with 8 1/2 hours of convection cooking. I do not have enough experience with smoking butts in the Bradley to make a conclusion....
I would say so, yes. That's as fast as butts cook in my (convection) pellet poopers.
