Title: What is a good "Keep Warm" temp for the Bradley?

What do you guys think is a good temp to set the PID for to have a good "keep warm" temp? In case the IT reaches the target temp a little earlier than expected like with a overnight smoke. A temp that is not going to overcook the meat but keep it safe for a hour or two...

Just set the alarm on your Maverick ET-732 to wake you up when it has reached its target temp and then FTC.  I would be worried about 'simmering' in the Bradley for very long after it has finished cooking and leading to drying out the meat.

When I am having a large cookout, I use the Bradley as a hot box to keep some food warm until it is ready to be served. Each rack will hold a half-steam pan. When using it as a hot box I set my DigiQ II at 150°F.

I use my Bradley as a hot box when we have a party also, PID set at 148 F

Product in a steamer pan with the lid on the pan.

Thanks for the info guys. I will set the PID to 140 ;D
