Father (of smoke), forgive me for I have sinned.
It has been 5 months since my last smoke. 
I'm guilty of working too much and ignoring my Bradley during poor weather conditions. 
I promise that as the weather changes for the better, I will get back to a regular smoking schedule.
I will do my best to smoke beef, pork, poultry, seafood and anything else I can stuff into the Bradley. 
 

Well, like it says.  I haven't been active around here for a while.  Been pretty busy with work and the weather has been lousy.  Don't feel like sitting in the cold rain on my days off but I have still been lurking every once in a while. 

The last time I smoked was around X-mas time.   Used Kumocks recipe on Salmon and Rooster fish.   Let's just say that the words "this is the best smoked salmon I've ever had" where very common.  Thanks Kumock. 

Anyways, I just wanted to say HI to everyone. Don't worry, I haven't forgotten about what a great place this is. 

So, what do you suggest I smoke first???

BTW, I still have a whole duck in the freezer.   Anyone come up with a great smoked duck recipe yet?

Hi SD and welcome 'back'.  Sorry but I've never done duck in the smoker.  I can't even get it to come out all that good in the oven.

Know what you mean about the weather.  We're in the middle of about 7-9 days of rain and cold temps.  Yuk.

Welcome back!

I've never smoked duck,but do know from BBQ'n or roasting them,they're pretty greasy ,so make sure you take care not to have a grease fire.
Keep the warer bowl full and change water occasionally.

There has bee a smoked duck recipe that was added to the list of recipes in this forum and I looked for it but I could not find it. Maybe some one else would be luckier.

Glad to see you posting again.

I'm not sure if you have a domestic or wild duck. There are a few domestic duck recipes on this board, I believe Car54 posted on turkey   duck and seems to be the most popular, Manxman has an excellent smoked duck breast recipe (which is also on the recipe site and posted below), also I have posted one. Also some wild turkey posts. Again I'm in a hurry today and don't have time to do a search right now.

The duck recipe on the recipe site is very good. We don't have a duck section so it is located in the Chicken section.

Thanks guys.  It's good to be back baby!!!

I had done some good research on duck before and I do remember seeing some recipes.  I guess I should have said something along the lines of - are there any new duck recipes?  OR,  has anyone perfected any of the old ones?   


BTW - the duck is farmed and I do plan on having a fire extinguisher handy.

I reread my last post - I meant to say Car54 post on duck, so I will change that.

I don't believe that I change the water pan at all when I smoked/cooked my duck, but it wouldn't hurt to do so after applying the smoke. There is a lot of fat that renders out, but I wouldn't be too concerned about any fire. When cooking whole duck I only take mine to 160°F measured in the thigh. If I am only cooking the breast I take them out at 152°F - 155°F.
