This morning I put 5 pounds of beef in the Bradley for 1 hour and 40 minutes of hickory smoke and then transferred it to the Excalibur to dry for jerky. Using a good friend of mine's recipe to flavor the jerky. Now resting comfortably in a brown paper sack.
Then, I put 2 racks of St Louis cut ribs in the MAK burning hickory. Dusted with Head Country to start. 2 hours in started basting with rice wine vinegar spiked with hot sauce. Dusted the ribs with Head Country again mid way through the cooking period.
Finished product.

Everyone has their preferences on ribs. I don't like basting ribs with sauce so I wait until eating to determine if I want any sauce on ribs or not. Big Moe's BBQ Sauce is flat awesome! Thank you NePaS for that bottle! Big Moe's comes from the Carolina Treet factory. OMG this stuff is good. Poured it straight out of the bottle on the ribs. Will definitely be ordering some of Big Moe's. Not at all sweet. Vinegar based. Perfect for this KY boy.

Thanks everyone. Went to pick up one of the racks with a pair of tongs for the "bend" test to determine if they were done. The rack of ribs broke in half! >:( Jan was outside with me so I just turned to her and said "DONE!"
I'm not a "falling off the bone" fan but they still turned out nice. Big Moe's is awesome. I'm thinking some of that on a pulled pork sandwich would be killer. Looks like I need to get some butts on the grill.
