Just picked up some casing to make sticks but is what i need help with is what kind of seasoning should i use and do i have to use cure #1 let me know thanks guys... i am wanting something dry something diffrent than hi mountain
A good one to try for a mix is AC Leggs Snack Stick seasoning #116 (It comes with the cure) A package of seasoning is enough to do 25 lbs of meat.
or for a 5lb batch use 6-7 tablespoons of mix, 6oz water and 1 teaspoon of cure #1. I learned that trick from the Nepas.

Hey Chris, not sure but you may have made a typo on the amount of Leggs. I use 6-7 Tablespoons and not teaspoons. Most likely I am doing it wrong. ;D
