Title: Temp Probe Placement with Four Racks

Im smoking some spare ribs today (3-2-1).  Will be using all four racks.  Where's the best place for the PID temp probe.  between racks 2 and 3?

You should place your probe just under the lowest rack outta the way of any drippings that may fall on it.

Also seeing that your smoker will be full I would rotate the racks, top to bottom and front to back after the 3 hr smoke and after the foil time I would arrange the ribs that have the meat pulled the most from the bone on the top rack and the ones with the least amount on the bottom and the ones in  between on the middle racks.

You might need more foil time with a full load like that, say maybe 3 hr.

I go by how much the meat pulls back from the bone to tell me when to pull outta the foil (when I use foil)

You want the meat to be pulled back about an 1/4" before you pull outta the foil.

Dont forget to check that water pan every time your in there.
