No smoking this weekend for me as it's turkey day north of the 49th.
Heading to Fairmont BC for some family time and my last round of golf for 2005.
Time to hang up the clubs and break out the firearms.[:D]

Just going to toss a bone in ham for 4 hr.s(bottom rack) some ABT's(new found freind,2 center racks) and the top rack will have some Garlic/maple scallops sprayed with E/V olive oil.
To bad I can not eat buzzard..............

I'm doing a Boneless skin-on 5lb turkey breast. I'm going to brine it first, then smoke with cherry.

Happy Thanks Giving good buddy!! I've still got a few fish to catch before the muzzle loader season. Hoping for a tasty doe to go with the fall walleyes. I gotta ask....what else is better than fresh walleye, Bradley smoked gobbler, fresh deer and good beer for a fall dinner with the boys??

Glad to hear you didn't get carried off by mosquitoes this year. We've had a couple good frosts now, bugs are pretty much toast.
Good luck with the muzzle loader. I've been out twice now with the bow, but haven't bagged anything yet. One of my new hunting partners came from Brandon, and by chance he sold his muzzle loader before he came out. Lucky for him, as we don't have a proper primitive weapon season. Archery only "pre-season". You can hunt with muzzles and cross-bows, but you have to do it in the general season, and unless it's a passion, you might as well have a good high power rifle and scope.

I'm (still) smoking peppers; nothing exciting but if I can figure out picture posting here, you would all be amazed (worried) at all the Chipotle, Ancho Chili and even Habanero peppers I have done this year....
Anyway...
What do Canadians have to be 'Thankfull' for? We (Howlies, Gringos, Infidels, etc) created this NOV holiday because after conquering the indians 'we' discovered corn and roasted turkey. OK, actually, we tortured the Indians to get their corn know-how, stole all their turkeys at gunpoint and took their land...

Now thats music to my ears. But it seems like I don't hang up the firearms to often. Have a great Thanksgiving up there and good hunting when you go.

I have friends coming over making a combined total of four adults and five kids four years old and under. That being said, supper has to on the early side so I put a whole turkey in the BS at five this morning! I figure ten hours of cooking will take it to five PM just when the wee ones start chewing on the furniture.
First time cooking a whole bird. I have cured and smoked turkey breasts before and they were great. It is only ten oclock now and I am ready for a beer.
As it is Thanksgiving, I am thankful I have a Bradley smoker and food to put in it for my family, and the ability to get that food both domestic and wild.

Personally, I'd think you'd be thankful for, among other things, the wonderful natural beauty of the land that brings you moose & caribou. Not to mention the world's caviar of fish, the walleye. Why on earth would you eat turkey on your special day?

I somehow don't feel bad for your short hunting season CC.
I normally do well for deer, ducks and geese. Having been bitten by the turkey hunting bug three years ago, I now take pride in going bird watching with my 870 every spring. One day that tom will get a little too close, but until then, its just bird watching.

I cured the Geese Breasts using Mortons Tender Quick. Following the recipe on the package for injection I allowed breasts to cure for 24 hours. I rinsed the breasts and zip-locked them in Szechwan Marinade for 12 hours. I sliced open the breasts making a pocket in the center and stuffed this pocket full of Monteray Jack, Cheddar and Colby Cheese. I used toothpicks to close up cheese pouch. I put a layer of bacon on the upper rack and a carefully placed foil on the bottom rack to catch as much of the drippings as possible. I warmed smoker to 200 degrees F before putting trays in. I used 6 pucks of special blend (4 would have been sufficient) and I think (maple or cherry next time). I cooked till an internal temp of 165 degrees F. (a little excessive but I wanted well done). Heat slider was set to 3/4 and vent was 1/2 open. It took approximately 4 hours with ambient temp outside at 5 degrees celcius. There was enough drippings to facilitate a batch of baking powder biscuits to sop it up.[:p][:p][:p]

OK thanks. I was thinking you had used some kind of Szechwan cure and I was curious what it was. Have you ever done them without curing? It sounds like they would be good this way too.

When you get to try wild turkey you'll find it a lot more moist that domestic birds. I know people who just breast them out but I took the time and plucked mine. I was able to roast it and let me tell you its the best. I just wish I had a better place, closer to me to hunt turkeys. There are lots of places to hunt but there is a lot of private property and the good public land is a couple hours away.
