Title: BAMA RED Chicken

Got some BAMA RED RUB form Gus the other day and gave it a shot this weekend.

Smoked for 2 hr with Apple, cabnet temp set at 250 F and after the smoke time we got this.

Finished off on TBE till an IT of 160 F

Made some sweet bread rolls.

After a 10 min rest under a foil tent, DINNER TIME!

Moist and tender with a crisp skin, dont get any better than that!

Thanks for the rub Gus, mighty tasty, kinda a sweet rub, next time I will lay it on with some Soileaus.  ;D

Excellent!  These chicken shots always remind me I need to smoke more chicken! And yours with those rolls, reminded my husband I haven't baked in a while.

I bake every weekend wether it be rolls, bread, pizza dough or even bread bowls,
gotta keep my starters fed.  ::)

We raise our own chickens and freeze all them just like you see here.

I would also be interested in a good cold pasta recipe.  ;D

This one is Betty Crocker "Suddenly Salad Ranch and Bacon" its the best boxed one I've found yet.

That looks MIGHTY FINE (every bit of it!)

And, hey... Don't worry about whether those chickens are alive or not when you freeze 'em.
Either way, they'll be cook-ready when you THAW 'em.

Not to steer the discussion away from the awesome chicken, the Betty Crocker Ranch and Bacon is awesome. Sometimes I will throw in some cubed ham and cheese as well.

I do have a killer Potato and Pasta salad resipe if anyone wants it.

Well back to the chicken, I haven't tried the "Bama Red" yet but it looks like it may have a fair amount of sugar in it for the (TBE) inferred cooker! Although I'd eat skin and all (dark meat rules), because it looks so good! Plus 2-3 rolls!  ;D

The "Bama Red" does have (from the taste of it) quite a bit of sugar in it.

I ate the skin first and it didnt taste burt, just nice and crispy.  ;D
