Hi all,

Don't know what happened the first time.  Site went wacky on me.

With your guy's help getting ready to do up my first butts for work Monday, I don't get a 3 day weekend. 

As from the other post I am going with Gunshot injected, GP rubbed on one and the Salt Lick clone on the other.

1 at 6# and the other at 6.5#-

Hope to finish Saturday morning, FTC for a couple than shred and store in the fridge.  Will do the crock pot thing to heat it up.

looks you  are well on your way and have a good plan.... smoke and cook in the smoker til 185 ... pull and FTC  with apple juice  for a couple of  hours  then shred for pulled pork... and enjoy

The cole slaw and bread will be provided by others.  I believe the bread will be Hawaiian rolls for the buns. 

Basically pulled pork sliders.

Looks good allready.

We have them on rolls most of the time around here too, sweet dough and sourdough rolls.

Cant wait to see and here about the finished product.

Got home and got the butts in the Bradley.

Got the probe going through the top this time instead of the door.  Got the probe in the lower one for now, the timer set at 2 hours to change the water and 4 hours of hickory in the hopper -

After taking it out I do have to wonder if I cured the butt with the injector.  Here is the liquid run off, over a cup  -

You'll want to reset that digital timer before you go to bed.  For some reason I think they shut down at 9 hours??

Yep, 9 h 40 m. 

I assume I should rotate, flip and switch at least once?

Yeah, I would swap/rotate them before you go to bed.

Do you have room to move them up a notch to the next set of shelves?    That one on the bottom will get a fair amount of heat from the element..

Here is were we stand at 9pm/5 hours.  Hopefully it will make it until tomorrow more.  I don't think it will be to bad since it took me a while to do the switch, temp dropped to 160F.

BTW - how in the hell do you keep from digging in right away?!?!?!?  Not only did it smell incredible the scraps that fell off were amazing.  Granted I haven't had breakfast yet.

Four hours later and all finished.  After taking them out and nearly burning my finger pulling the pork I am not a believer that it could keep them hot for 6+ hours.

The GP one -

Tastes like it was already sauced but did turn out dry.

The Salt Lick -

Much moister but not as intense as the injected one.  

Both will be good I think.  Not going to win prizes but they will be passable for my first time.  Will have to rethink the smoke though as the smoke flavor was very mild in both.

The smoke flavor will wake up after the rest time, come Mon it should be more robust.

And the last part, the pies.

Did up a couple Southern classics, a peach and pecan.

Was going with apple in the planning but when I went over to the produce area I could smell the peaches.  The secret to getting a good peach for a pie is if it doesn't smell like a peach it won't taste like one.  These reeked of peachy goodness so "there has been a menu correction."

Also did up a pecan pie (it's a Texas thing) for the feast.  This one may have not turned out to well.  The oven ran a bit hot from the previous pie and it got a little dark.  We'll see how it tastes.
