Title: int temp for ribs

Hey guys, got some hungry folks here. Whats the best temp on baby backs? Is 160 safe, dont want a bunch os sick folks. Pulled them after 3hrs of smoke and put them in the oven at 350 to to cut down the time. Am I doing the right thing?

Ribs don't get cooked by IT. They will tell you when they are done. The meat will pull back from the bones at the tips and if you twist the bone slightly the will almost be loose from the meat. You don't want them to fall off the bone though.

Glad I could help. You have to watch not to get them to the fall off the bone stage or they will be mushy. Good luck.

Threw them in the oven at 350 covered in foil foe two hours......turned out AWESOME!!! Im thinkin I stumbled on to something good. Anyone else have this kinda luck?
