Hey guys, I need some help. I just made some bacon using the method at 3men.com and used the Maple ham and bacon cure. It turned out pretty good, just the right amount of salt, only I like my bacon a little sweeter. Is it just a matter of adding a little more sugar, or should I use maple syrup. I dont know how much you can tell how the end product will taste by tasting the brine. Again I used 3, 2,liter pop bottles filled with water and frozen, and placed on the bottom rack to keep the temp down and it worked for the whole 8 hours of smoking. Anyway any help is much appreciated.

Not the bacon man for sure but I vote for the maple syrup[:D]

Why not mess with it and kick it up with some dark brown sugar... should be interest!

Experimenting is half the fun try adding more sugar or maybe maple syrup.Good luck
