Title: Smoking PEPPERS

With a PID controller is there any reason I can not smoke peppers to fully dry in my Bradley.
2-3 hours smoke, at 145, then just 145 till dry?

With this work?

It will work, but I smoke/dry my peppers at a 135°F - 140°F. Depending on what type of pepper, and the thickness of the skin, I may slit them. I know you have the circulation fan, but I still haven't installed mine yet. So I have to rotate the trays, and keep checking each tray for the peppers that finish sooner. I sometimes will move them to my oven which has a drying setting.
