Hi,
Is there a comparison chart available of Tender Quick and Cure #1. A lot of US recipes list TQ but the only cure available to me here in Australia is Cure # 1.
Being a novice, I just hate to stuff things up.

I use this as a replacement for TQ, http://www.susanminor.org/forums/showthread.php?t=441 It was posted by Habenero Smoker. He has also posted great information on cures.

SiFumar has pointed you in the right direction.

This may also help, but keep in mind that the measuring charts were made for sausage making.
