Title: Lastnights dinner

Started off with a whole deer loin, trimmed of all blue skin and fat.

Cut in half.

Made a paste with this stuff.

Added a some of these.

In the blender till I got this.

Made a bacon weave and put on some paste.

Placed on half of the loin.

More paste.

The other half loin, put the thick end on top of the thin end so its the same thickness when rolled up.

Roll that baby up and spread the paste all over it.

Throw in the smoker set at 250 F and applie 2 hr hickory cook to an it of 145 F and we get this.

That is a good looking dinner.  Good job on the weave, and the paste lookslike an adventure.  How was it?

My Friend you can cook that for me anytime, looks really healthy to me...not to much of a bite I would guess...

Thanks, the weave was a b!tch cause all I had was el-cheep-o bacon, not uniform AT ALL.

The paste was a good mix of flavors with the onion on top and I could hardly taste jalapenos.

Nerveless it did not cover up the delicate flavor of the deer, which I LOVE.

Gonna change a few things next time, now that I have a base to work from, I kinda winged it.  ::)
