The basic recipe for a fatty is:

take some ground meat.
(optional) put some filling in it.
(optional) wrap with a bacon weave.

Smoke to the IT appropriate for the meat you used.

Example - The bacon explosion:

1. Weave bacon. I usually do a 7x7.
2. I use spicy jimmy dean, roll it out flat, about 3/8 inch thick.
3. I put a layer of crumbled bacon, maybe some shredded cheese.
4. Roll up the sausage, wrap the bacon weave around it.
5. I put on 2 or 3 hours of smoke @250F and continue until the IT is 165F

rest, slice and eat!
