New to the forumn. I've got a quick question.
I'm smoking two briskets this weekend. They are both 12 pounds. I typically cook a single brisket for 1:15 per pound at 220 degrees. Do I need to add any additional time because I'm doing two, or just go with my same method? BTW, I have the 6 rack BDS. Thanks.
I think you will definitely have to add some time. The bottom brisket will block much of the heat from getting to the top brisket so the temps will not be consistent. I would rotate them regularly and count on up to 2 hrs per pound and FTC if done early. The experts will be on to add their thoughts I'm sure.

i would add more time and watch the bottom brisket, it will get done first ... pull and FTC then wait till the other one is finished... rotating the racks top to bottom and front to back is a good practice and rotate them once every two to three hours any sooner and you wont have any cooking time...
