Title: Cheap fast method for testing rubs, sauces, and wood?

Is there a cheap cut of meat that can be sliced thin, rubbed, and smoked for a short period of time to experiment with?

I would like to try out new rubs, sauces, and wood combos without spending the money and time smoking a whole cut of meat.

Leg quarters if you like dark meat, bone-in split chicken breasts if you prefer white.

Both will soak up the rub/sauce/smoke.
