Title: Greg's Spicy Stickc - Trehalose

I was planning on making a batch of Greg's Spicy Sticks.  I picked up some citric acid to add - although the recipe says it's optional. 

What about adding some Trehalose ??  Would it help/hurt/not make a difference ?????

CA will just add to the goodness of the sticks, make em with a tang.

The trehalose is used for if your going to freeze them, keeps em looking good and is used to take some gaminess from veniso, elk and such.
