I know there are enough of you out there that smoke cheese yourself but does anyone here make their own cheese? I'm thinking on trying it out.

I have made some. I found that it was too time consuming to keep it up with all the other things that I do. A good resource for cheesemaking is cheeseforum.org. There are quite a few people there making some beautiful cheeses. Another resource is deejay's smoke pit http://www.deejayssmokepit.net/ Debi, the owner of that forum also participates on the cheeseforum.org - she is a wealth of knowledge.

I just read through that post - wow, I forgot that I had written it. there is more in there than the cheddar.
Thanks Deb. I understand about the time consuming thing. I make my own beer and wine, waiting for a batch to be ready for drinking can be torture.
