So for some reason summer brings us tons of company. From this coming weekend to the end of August we'll have someone here every weekend. Why would anyone want to come to 115-120 degrees is beyond me.
I went to store looking for a couple of butts for this weekend and all they had in the meat case was shoulders. I ask the butcher if they had any butts....they said got some in still had to price them. 20 minutes later I was brought out Shoulder Boston Butts. I didn't have time to argue with them , grabbed 2 and went home.
These are half shoulder/half butt. Smeared them up with CT, S&P,garlic powder and chipotole powder, over night rest and on for 5 hrs hickory.

They definitely will work! Great price! Treat 'em just like a butt. STC, Hal and I just did about 80 lbs of shoulders and they turned out awesome. Take 'em to about 195 IT and they will all but fall apart just by looking at them sternly! :D
I'm glad to hear you guys think it's a good price...I was kinda miffed about it all...what no pork butts!!! Actually the shoulder end does seem quite meaty. Been meaning to ask you guys where you get those heat resistant gloves? Do you know if they come in sizes? I have small hands and all the gloves I've tried were hugh!
Went out to change the water...standing at 165....expecting another 8hrs at least. Taking a cold shower now and going to bed...it's like to hot here still.

I'll dig up a link to those gloves we have. (they are the same ones Fire Fighters use) They do have different sizes...
Well, it looks like they have different lengths... The ones we use are the B13 7712R-10. (12")
I've got a pair of the 14" ones and they come up to my elbows. I think I gave them to Hal.

Well hit 193 IT at 0600.....decided to take out and FTC(no pics yet) so I could get on with my morning. I did take a pic of the goodness that was collected in the drip pan, 1 can of beer plus all the yummy juices to pour back over. The big spatula next to it is what I use to lift the meat off to the foil.

Miami is hot SG...but you get the killer humidity! When you walk out the door here it's like you opened an oven door.

Finally some quite here for a bit...everyone out supporting the local economy. ;D Started pulling before taking pics...so here is one pulled and one getting ready to be pulled.The taste was great! Also pic of both pulled. Very little fat left which was surprising....guess didn't have much to start with. Goodness mixed in made it all the better!
