Title: 2 Small Butts - question
Post by: gbritten_nh on June 25, 2011, 10:48:08 AM
When I went to buy butts last, there were no decent sized ones, so I got one 2.3 LB and one 3 LB, planning to do a 5 lb batch of Kielbasa.

Plans have changed for various reasons, so I will now smoke the larger one tomorrow with Jan's rub and EVOO, and have the following plans for the small one:

I chunked it into pieces of roughly consistent grain, partially froze it, and sliced about a lb for stirfry I will do tonight.  For the remain bit, I though either to do some kind of simmered stew with potatoes, not smoked, to which purpose I cut it in approximately 1" cubes.  After further thought, does anybody have a smoking inspiration for 1" cubes of Boston butt, or should I stick to my original plan.

I think you are good to go with your plan. Someone else might come along and have an idea.

They might want to stick to racks...
Maybe rub 'em and smoke 'em in a foil pan with some apple juice or sumthin'?
