Title: Steak - Ribeye and filet mignon

I have started cold smoking (smoke generator on and oven off) 3 8oz filets and 1 ribeye steak.  I had set the smoke for 2 hours and plan on going straight to the grill with them.  After reading the forum on steak, i am concerned that i am not doing this right.  Any advice?  Thanks!

Been in smoker for about 40 mnutes.

I generally only cold-smoke steaks for 40-60 minutes.  Then either straight to grill or cling-wrapped and overnight in fridge.

You are fine.  I have 4  rib eyes cold smoking right now for 1:40 then will go straight to grill to finish.  Seasoned with Primo's Garlic Pepper for the cold smoke then will coat with Rodak's Coffee Rub before hitting the grill.  Using Pecan for the cold smoke.  Did this two weeks ago and family went nuts over how good the steaks were.

Finished eating about 1/2 hour ago and they were great!  The filets were so and the smoking did them justice.  I think an hour might be a good time to smoke them, but i now know that 2 hours was okay too.  I used Special Blend.  Hickory or Mesquite might have put too much smoke in the taste.  Thanks again for the replies!
