Title: Cold Smoke Adapter or Not
Post by: photobyallen on June 29, 2011, 05:39:47 PM
I read the manual and it stated that to cold smoke, I could do it by not turning on the heating element.
I smoked some cheese last night and by keeping a tray of ice in the DBS I was able to keep the temp at 85-90 and it looked like the cheese came out ok.
My question is, would getting the cold smoke generator make a big difference? Also could I just leave it attached when doing hot smokes by turning on the heating element?

Thanks
Allen

If you can keep the temp down without the adapter, you're ahead of the game.

If you get an adapter, I wouldn't leave it attached during a hot smoke unless you have two heating elements.  Every little bit of heat helps in my OBS with only one element.

I use a cardboard box with dryer vent hose attached. A lot cheaper and it works.

Photo...I have the cold smoke adaptor...but I have to...never really gets below 50 here in the winter...I thought the investment was well worth it...but where you live, with a digital, may not need it...except in mid summer like now...

Hi Allen;
Welcome to the forum.

Off setting the generator for cold smoking really helps. The generator can raise your cabinet temperature to at least 125°F and even higher if the ambient temperature is high and/or if there is direct sunlight.

If you have the DBS, the cold smoke adapter comes with a by-pass sensor cord. So unless Bradley change the design, if you make your own cold smoke adapter you need to rig up a by-pass, or extend the length of the sensor cord.

As mentioned above, when hot smoking attach the generator back to the cabinet, for the extra heat and the heat from the heating element helps the bisquettes burn more completely. You will notice that when the generator is offset the bisquettes do not burn as well.
