Title: Rib question?

I'm smoking two racks (cut in half) of spare ribs in the OBS for a fast and easy meal tomorrow. I'm smoking them with the 3-2-1 method and just started on step 2.

Since these ribs will have to spend the night in the refrigerator and be heated again tomorrow should I finish the 3-2-1 or stop at step 2 and just go to the grill to reheat and set the sauce tomorrow?

Anybody had any luck with trying something like this?

Down to my last hour in step 2.

Anybody tried anything like what I'm trying to do?

TR, you could pretty much finish 'em off, and reheat quick on the grill
Either way, you'll be ok... Will just take longer tomorrow if you omit the last "1".

I do this a lot on camping trips.
Finish them off and reheat on the grill but wrap them in tin foil while re heating.

The ribs came out great! I reheated them on the gasser with all three burners on low. I had to really watch it to keep the flare ups down and out (I missed a couple but it was on the bone side). They were on about and hour and a half with the last 45 or so with sauce.

The only way they could have been better doing it this way is if I could control the heat a little better and reduced the flare ups. I'm thinking if I do this again I'll warm the grill up with the three burners on low and when I put the ribs on I'll turn off the two outside burners and push the half racks towards the outsides and I may be better able to keep the temp a little lower and reduce the flare ups!  ;D

I had some ribs come out pretty tough a while back after finishing on the grill (tried to speed up the process never a good idea)  The next day I put them in the crockpot on low with a thick coating of BBQ sauce and I hated to admit it but those were about the most tender I have ever made
