Well I got bored again so the wife and I done another 5# of Rindwurst and 10# of Knockwurst, taste is great but other knockwurst I've seen are lighter in color, used 33 mm hog casing's,emulsified the meat and smoked with 1:40 minutes of hickory, my thoughts on the darkness are since I use hickory it's just a darker smoke? Rytek's book does state you can make them darker so I'm not really worried about it but was looking to get them like a store bought one or close to it, as always your thoughts and idea's about the color will be greatly appreciated, only took a couple of pics so here they are .

Now I'm already thinking what to do next, although I wished Carolyn would get that liverwurst done, waiting to hear what she uses for the snouts. Have a great week everyone.

cobra6223 ...like Chris has said, they sure look good, and the texture looks great..
