I have never done baby backs in my bradley before and need help with them. Planing on doing 4 racks. I have a dry rub that I have used on ribs before that I am going to use. I guess my question is How long will baby backs take? I am not a huge sauce guy but do baby backs need it? On my briskets and tritips I have used a mustard slather over my dry rubs and the bark is always great. Will this bark be good on baby backs? If I do the mustard do I still have to do th foil or will the mustard work to keep the ribs moist? any and all help would be great.
I would try a 3-1-1 on the baby backs
I apply a mustard base with a dry rub over it for baby backs. I still seal them in foil with about 1/2-2/3 cup of apple juice per slab for stage 2 of the cooking to make them tender.
