Title: Elk SS/Cheese/Jalapeno

Going to do some 32mm Elk, cheese, jalapeno cracker size sticks sometime today.

Got the meat de frosting now.

I just bought a bunch of 1 1/2 inch SS casings. I figure I cut up a 2 1/2 inch sausage into quarters so they will fit on a cracker so why not just use a casing that is the size of a cracker. I will probably do all my summer sausage this way. They smoke quicker and they will water bath well.

By the way did you get an Elk this last year?? ;D

Yeah Kirby sounds like we all doing this for fater better results. However i dont do a water bath much.

Have a really good friend who has been so kind to pass on his Elk hunt which i cannot thank him enough.

Going with some pepperjack for an extra kick.

Pepperjack n jalapenos,,,,,,,,,,,,perfect combination.

Got me some SS n cheese with LOTS of black pepper in the smoker now.  ;D

Must be a SS n cheese weekend,,,,,,,,,,,,,,snack sticks tomorrow.

Not just one fitting but 2 of em and my neighbor noticed my hot water heater leaking....WTH This place is only 7 years old.

Well after some plumbing issues downstairs i atleast got the SS mixed up with the seasoning. Now gotta go to the hardware store and get some 3/4" pex and fittings for the hot water heater.

Mixed and ready for cheese and Japs later.

I tell you its all a plot from the Mrs. She knows your using the stuffer in the kitchen when shes not there to supervise!!!

I was under the house most of the day yesterday. I have some damage so gotta call the insurance....yuck


Was thinking on 32mm but might go with regular SS casings.

She dont watch it i'm going to send her to work on a daily basis  :D :D

Dealing with the Insurance company sucks.



I like to use the normal SS casings for a couple reasons.

There allot cheaper per lb of sausage made and I eat summer sausage on a sammie allot, much easier with the bigger hunks of sausage.

Just sayin.  ;D
