Title: Snack stick test run

Made up a little 2 lb batch of something I just winged up last night.  ::)

1 1/2 lb ground deer 3/4 lb 80/20 GB with some seasonings that sounded good at the time.  ;D

Looks about right,,,,,,,,,,smells good too!  :o

Gave them 2 hr 20 min Pecan and about 8 hr later, raising the temp slowly this is what we have.

There in a papper bag in the fridge now letting the flavors blend, will give a taste test tonight.

I store mine in a papper bag in the fridge for no more than a week.

If I'm goin to vac seal, I let them breathe in the bag for a couple days then seal.

Didnt get the taste test done lastnight,,,,,,,,was called to a birthday party and by the time I got home I was in no shape to give a fair taste test.  ::)

Edit: Mama was drivin.  ;D

I did some Greg's sticks the otehr day and put in a paper bag in fridge and it seemd like they dried out in a day.

Also, I keep mine in the veggie drawer(aint been veggies in there for years  ;D)  in my fridge so when the fridge does the auto defrost thing it dont suck the moisture outta the sticks

I use a gallon zip lock bag to store my sticks in the fridge.  No problem of losing moisture that I can tell.

I think I used garlic salt rather than granulated garlic, a bit to salty.  ::)

Otherwise the flavor was gooood.

Looks great, Eat two sticks at bedtime, wait for feet to swell, slam 2 beers and call in sick ;D Best day off you could ever ask for :-X Just kidding, everytime I eat microwave popcorn my shoes get tight, doc says cut down on the salt ;)

I can easily see that ('too salty') being the case using the garlic salt as usually the percentage of salt to garlic is about 70% salt to 30% dried garlic.
I've also discovered certain flavor profiles (saltiness, smokiness, bitterness,herbal, etc) become stronger or more concentrated as the sticks continue to dry.
