Hi Everyone,
Really would like some feedback on casings as far as can you use any kind of casing for any kind of sausage, For example I have come across some recipes I would like to try but they call for like beef bungs or some type of sewed casing, be it natural or synthetic. I own synthetic, beef rounds, sheep and some I probably for got I have. I know smoking vs not smoked or hot water bath  vs no bath would probably make a difference as to what you can and can't use also. This probably sounds as confused as I am. Again any and allcomments ans help id greatly appreciated, Thanks in advanced everyone.

Any casing can be used for smoked sausages. Natural, collage, synthetic, fibrous, protein lined, hukki, vegetarian, cloth. Fresh you should stick to natural or collagen.
