FLBR introduced me to these little nuggets at the FL Smoke Out. Man were they good. So with all the family I have coming in town over the next few weeks I decided to do a test run on some jerky nuggets. First I went to the local butcher and bought some Morton's Tender Quick. I am going to marinade these in Stubbs Teriyaki Marinade. I bought 2lbs of mueb nuggets.

So here's the plan:
1. Marinade the nuggets in teriyaki marinade with the tender quick overnight.
2. Smoke for for hours with hickory @ 140 (is 4 hours too much?)
3 After smoke brush nuggets with more teriyaki
4. Continue in the smoker for 4 more hours @ 140 until done
Your suggestions will be greatly appreciated!
I used 5 pucks of hickory on the oens I did last week and thought they could use more smoke.
Never done them before, but they sure sound good and I don't think they are real costly to make...

All in all the jerky was a success. Not a big fan of using teriyaki for the jerky but it was only a trial run. A little salty but I am not sure if its from the teriyaki or the tender quick. I probably should not have tossed them in more teriyaki marinade halfway thru the dehydrating process. Now to order some jerky seasoning and do it all again in a few weeks...
Snelly it is the MTQ making it too salty. I use cure#1 and they are not salty with the soy vay marinade ;D
